My family and I were just discussing this topic a few hours ago.

What is your favorite food(s) that you enjoy during the Christmas holidays?

For me, it is a particular smoked turkey offered by a company out of Tyler, TX - Greenberg Smoked Turkeys, Inc. Something about their combination of seasonings and smoky flavor just lights my candle!

My wife is from Tyler, so whenever we visit her family during Thanksgiving and Christmas, we always, without fail, have a Greenberg turkey. Whenever I eat it, it just reminds me of the holidays. Both Thanksgiving and Christmas holidays also correspond with extended vacation time I take from work to go deer hunting, so I often take some Greenberg turkey back to my deer hunting property with me to enjoy in the evenings after the hunt. 

So, for me, Greenberg turkey is synonymous with the holidays, cold fall and winter nights, carefree happy times, and crackling fires. Not only is it delicious stuff, but the holidays simply wouldn't be complete without it. I've tried smoking and deep frying turkeys myself, and although I've had some good results, they still pale in comparison to a Greenberg for me.

My mother always made mashed turnips for Big Occasions like turkey dinners....we didn't always have turkey for Thanksgiving or Christmas....usually one or the other....but Mom always made turnips to go with all the mashed potatoes and veggies and what-not....it was a tradition. 


And, actually, you can eat them ANYTIME.....( anytime you want to peel 'em and chop them and boil them and smash them! )

Penny and I will be doing Lobster, which is a tossup between that and a Honey Baked Ham.

I would like to try one of Ted’s Turkeys though.

Last year for Thanksgiving I cooked an 8 lb. Black Forest Ham in the crock pot! THAT was a big hit that I will have to do again!

We once lived in Tyler... my sister does now.  Greenberg turkeys are amazing.  Ted, you are absolutely correct about the unique flavorings.  Nothing like it.

Parsnip Vichyssoise, cranberry/orange bread pudding with Amaretto sauce, roasted pork loin with wild shiitake mushroom sage dressing, cranberry/wild cherry relish, yam casserole, a bold and fruity red wine, softly sweet muscato, finished with a well aged tawny port.
