Hey guys,

I'm looking to buy my first pair in the next few days.
The main incentive is a 3-day trip to Glacier National Park in the near future.
In general, I foresee using the binoculars mostly for hiking, wildlife watching
or random fun activities.
I certainly won't use them for hunting and most activities will likely be land-based.

Unfortunately, I can only spend between 150$-250$ for now. Cheaper is better if the difference in quality is not noticeable. And I won't have the chance to try some on before buying so I'll have to buy based on reviews/advice/internet articles.

I found 3 possible choices in either 10x42 or 8x42.
Bushnell Legend Ultra HD
Nikon Monarch 3
Nikon Prostaff 7

I still need to decide on the 8x vs 10x matter, I read some articles but not sure yet what's good for me.

What would you guys choose in my place?
As a second question, are there ever any significant discounts on binoculars or the prices are mostly constant?

I would add these to your list.
 
 
All three that you listed, plus the Nikon AE should provide you with a more than  satisfactory experience. 
 
Another great option that gets rave reviews and is under $100.00.

I would get the ZR Summit ZRS or as a step down, but still excellent for the (lower) price, the ZR Vistas.
 
I currently have both and feel they are the best in their respective price classes.
 
Just my opinon though.

Good suggestions above. I have owned all of those models at one time or another.

I would also suggest the Sightron Blue Sky SII 8x42 and 8x32 models. They are both priced between $150-$180 and offer simply excellent performance for the price. There is a lengthy thread over on birdforum detailing them and comparing them with some significantly more expensive models.

I think they are certainly worth adding them to your list of choices.

Vortex Diamondback 8x42 is amazing for $200ish and the VIP warranty is good aswell.
