I'm building a custom Mauser '98 rifle in 250-3000. My dilemma is which of these 2nd hand/NIB scopes to buy and mount ?

I like FFP scopes and don't really need more than 10x at the top end. My preference is for a well built scope rather than bells and whistles.

Zeiss Diavari ZA 2.5-10x52T

Kahles Helia C 2.5-10x50

Swarovski PV 2.5-10x42mm

I'd love to buy from the samplelist but they don't export to Australia.

Your hunting regulations come into play here, can you hunt before dawn or after dusk.
Where I am the Fish and Wildlife/Fish and Game folks try to strictly enforce the half hour before dawn and half hour after dusk regulations so having a scope with a larger objective really isn't necessary.
Your regulations may be different.
Also the 250/3000 is a great caliber but not particularly long ranged so the 2.5-10 range should be perfect.
My dad took bear, moose and caribou with his, he was a superb field shot and stalker.
I would look at the Swaroski PV 2.5-10 42mm first, easier to mount closer to the bore and less likely to upset the rifles balance if you have to take a offhand shot.
Good luck.

No regs here in Australia, though we are normally enjoying a cold lager after dark  ....  :)

Thx for your input. Balance is a forgotten aspect of mounting scopes on rifles and is one of the reasons I have a  Zeiss 2.5-10x42 on my 7x57.

Well, I bought the Swaro NIB for US$1,299. Hopefully it should turn up next week and I'll compare it to my German Zeiss.

Well I finally got both scopes side by side at dusk. Subjective findings. Both were set at 6x to optimise the exit pupil from the 42mm objectives for my ageing eyes.

The swaro has a marginally better FOV.
The Zeiss is better in total dark when useing ambient light. Illegal in some countrys.
The 7 plex reticle on the swaro is thicker than I thought it would be.
The Zeiss #8 reticle is much better for finer shot placement.

The swaro only re-inforced why I love FFP scopes.
