It's easy and folks say it's the best they've had.

1. Slit breast length wise on both sides, cutting deep to form a deep pocket.
2. Soak Whole turkey for 2-3 days in a 1/4 cup salt and 1 cup brown sugar mix . I use a 5 gal bucket.
3. Remove turkey and stuff the two silts with spices of your choice, oil or butter. Normally breast meat is dry and bland. And this step helps make it much better.
4.Place in smoker with your choice of wood-oak, alder etc. And smoke for about 7 hours.

Keep bones, skin and carcass to make the base for a stew or soup they hold lots of smoke flavor.r
