roll in flour cook in oil add milk pepper salt flour to make gravy.  make biscuits - buttermilk couple eggs flour pinch of baking soda pinch of salt guess you will need a dutch oven.

 Yep! Pretty much any chicken and dumplins recipe (substituting squirrel) will work.

I know squirrel is really tough. Should you boil before cooking? Does that help any?

 We use a 4qt pressure cooker.  Directions come with the cooker that tells you how to use it.  Right off I think it takes less than 1/2hr compared to hrs for boiling.

Just made squirrel and dumplings this past weekend. I tried using a crock pot for a change. It didn't work very well. The temperature isn't high enough to make the dumplings.
I transferred the gravy and squirrel to a large pot and added the raw dumplings.
Dumplings were simply milk, flour and baking powder. After mixing I flattened them and cut the mixture into two inch squares. I then added it to the squirrel and gravy in the pot.
It came out great!

It's been a long time since I've eaten squirrel.  Is the average tree-rat meat really tough?

The dumplings recipe had the squirrel tender as anything I've had.

  If you cook it long enough it'll get tender but if you want to fry it up it's best to use a pressure cooker.  The meat will fall off the bone if done long enough.

Butter,lemon pepper. Soak meat in it and cook on a open fire slowly in a the pan you soaked it in. i guess it would be more like a simmering of the meat.
