I'm looking for a 12 guage pump shotgun. Any ideas on one that would be around $500 that I could shoot a slug and a buckshot/birdshot out of? I don't mind having to switch the barrels out (although I would rather have one that I could do all of it with the same barrel).

I'd look at the Remington 870, with an optional rifled choke.

It's super easy to switch the barrels out . A rifled slug barrel easily outshoots a smoothbore . Grab one of the combo set ups that comes with a 28" and a slug gun barrel ( prefer the cantilevered scope mount ) and you'll be set.

If you are near a larger town check to see if you have a police supply shop near you. I picked up a trade in a 1987 Rem.870 wingmaster with 20 inch barrel with rifle sights for $149 It did not have a mark on it. Not even on the tube from racking the slide. Yhey had a 28" mod ribbed barrel for another $65.

Man.... you won't find that everyday, that was a hell of a good deal, Congrats!
 
The 870 Express should have a combo that will work at a decent price.

Mossbergs are another opition. I'm left eye dominate and the top tang safety on the Mossberg works better for me, plus I cut my shotgun teeth on a double barrel with a top tang safety. Also, you're likely to a minimum of two barrels. A smooth bore slug barrel is cylinder bore and will spread bird shot into a huge pattern. I have 3 barrels for my Mossy 835, 26 in vent rib with interchanging chokes (upland game ducks, etc), 24 inch smooth bore rifle sight slug barrel (3 Gun Game), and a 24 inch rifled slug barrel with intergal mount with optics for deer/hogs. By changing barrels, stocks, or using Mossberg stock spacers I can configure the gun to do anything a shotgun can do. You can do the same thing with an 870.

I purchased one of the Excell semi-auto shotguns shown on a link below, in a turkey special model and was very pleased at the value/$$. I don't know if you are only wanting a pump, the second link is the H & R pump similar in style to the semi-auto I purchased. There are combo versions of both models if you scroll down through them. As I said , I found this shotgun to be an excellent value.

Get a Remington 870 (Wingmaster preferably).  They don't wear out, and they are the most reliable shotgun made.  I have well over 50,000 rounds through mine.  
 
The Mossburg just isn't in the same league.

Left eye dominant here also. Mostly shot doubles or over and under. I got a 12ga black powder double about 8 years ago. It sees most of the use now. It is fun to sit in a dove field set that smoke stick off, and hear everyone yell what was that. It is light weight and almost no recoil. Makes for a fun day. That 870 sits next to my wifes sewing table.

  Hate to be a repeat here, but 870 say's it all. Best all around shotgun I've ever used, and we use the scatter gun alot here in the Buckeye, as we are limited to the slug for deer. My latest 870 is the EXPRESS SUPERMAG with the 3 1/2" chamber. It comes standard with synthetic stock & a 26" vent rib barrel.  My wife got mine for $298. I mostly shoot buckshot through mine 95% of the time for coyotes, & hevi-steel for geese, & the other 5% I slide on a smooth bore slug barrel for whitetails. The smooth bore is great with the Rem. 1 o/z sluggers out to 100 yds. Consistantly hit milk jugs at 100 every shot. Out past that you will want a rifled barrel with the sabots.(very expensive). Or you can opt for a rifled choke for your shot barrel wich will run you aroumd $30. My whole entire family has used the 870 for years with no issues with any of them. Not saying that there is'nt other good shotguns out there that will suit your needs, but the 870 is hard to beat. Both hunter/military proven.Shotgun
