I just bought a Browning X-Bolt in 7mm-08 and now I need to add a scope.  I'm looking at 
Leupold VX III, Zeiss Conquest and Swarovski Z3.  What size and configuration do you guys recommend?  This will be used to deer and coyote hunting and maybe a hog hunt once in a while.  Hunting mostly swamps, creek bottoms and some field hunting.  Most shots would be 50-100 yards and occasionally up to 250-300 years once in a while.  Never owned a 7mm-08 before so I'm not sure of its true range yet other then what I've read.  

I also bought a nice lightly used Remington 700 VSSF  in .223 for varmit hunting.  Most shot would be say 150 yards of less.  Once in a while possibly up to 300 yards.  What size configuration for this scope should I consider?  I've only had experience with Leupolds thus far but open to other options.  Looking to keep scope cost at around $1000 or less per rifle.  Thanks

Also what kind of base, rings or one piece mounts do you guys recommend?

For the Browning I'd stick with the proven Zeiss Conquest, 3-9 should be plenty. or The Trijicon Accupoint 3-9, both great scopes and would be plenty for that gun. For mounts Talley one piece would be my suggestion, they are on most of my hunting guns and as long as they make them for them my future ones too.
 
As for the remington being its varmint and you don't need low end mag I'd go with a  minox za5 3-15 or 4-20, the glass will be comparable to the conquest line up for a bit less $$.  Again talleys will work fine here.

That X Bolt is a nice, tidy little weapon. I'd go with the Swaro Z3 3-9 X 36 myself. It's lightweight and has great glass. Another sure bet would be a Leupy VX3 2.5-8 X 36. The Talley lightweights are what I put on my X Bolt (when I still had it...LOL. I sold it to somebody that really wanted it badly). The scoped rifle was nice and light, accurate and felt great to me. Good luck.

I have a Swarovski z3 and it is my favorite scope.  I think the 3-10 would be a great match for your 7-08.

I would look at the Sightron sIII series for your varmint rig.
