While at an optics store, one of the older salesman tried to tell me that the optical coating(s) on binlculars, riflescopes, and spotting scopes degrade over time with exposure to air/light and due to slight material instability.  I don't buy this.  I know scope coatings can be worn off by improper cleaning, or washed off with solvents like Windex.  Has anyone heard of quality scope coatings naturally degrading (without abuse) over a 5 - 6 year span?

That depends on when those coatings were made.  Early coatings were hydrophilic and exposure to moisture would wear them out over time.  Modern day coatings can only be worn out via mechanical or chemical means (or extreme heat).
