The other day while fishing I noticed several Nutria rats and was remembering  when I herd they were good to eat and I shot one brought it home . I was kind of unsure  how to cook it so I deboned it , ground it, browned it with onion and bell pepper ,added it to a pot of cooked long grain rice and seasoned it to taste . I must say it was similar to squirrel in flavor  . I can't really say about the toughness since I ground it.

I am thinking about trying dumpling's since squirrels do well with it.

If any body any recipes or experience I'm listing .......lets hear it

My Grandad used to talk about eating muskrats during the Depression. He said they were quite good.
I'd give it a go!

They are similar in build and habit with the size going to the nutria.
Vegetarian rodents.I think they are unfairly judged as there cousins the wood rat.

I took a bite out of a freshly roasted woodchuck once.  Piece of meat on a stick over a fire in the woods.
