I purchased a nightforce scope nxs 5.5*22*56 NP-1. What is the best range to sight scope in for best performance in hunting situations shooting ranges of 300 to 500 yards.

Did you get a zero stop model?
I dont know if the NF zero stop is on 0 or gives few click below.
The zero stop on vortex goes 0.5 mil under 0. I zero my rifle at 100 yards 0.5 mil high, that puts me pretty much dead on 200 with the turret set to 0.  (thats shooting a 308)
I would recommend something similar. Then put your data in a ballistic calculator, that will give you a estimate data which should get you close to on target. Then shoot out to 500 and record  your actual drops and make the calibration correction to ballistic calculator.
 
Also, if your gonna be shooting to 500 yards.  personally i'd go with a higher BC bullet. Thats a powerful cartridge, but unless you go with a high BC bullet, your neutering its potential as you get further and further out.

It 's a zero stop, on zero.  It's a MOA.  Just didn't know if there was recommended distance to sight scope in for 7mm stw ammo to make easier on a ballistics chart

I'm not a fan the the core lokt bullet at those ranges, much better selection out there. With a 400 yard zero you're looking at up 2.5 MOA at 500 at 600 you're up 5.3 MOA that bullet is literally droping like a rock.

I would suggest getting on JBM ballistic calculator and studying your drop chart. Then go out and shoot the rifle at range to confirm your muzzle velocity. It is going to take quite a bit of ammo but if hunting at extended range, it is a must.

The ethics of taking a shot while hunting at 500 yards is a big one. I mean no offense by this Predator, but just by your original question you asked makes me pretty confident in saying you are not ready to take that shot.  Shooting on a range at 500 yards  in a nice prone position with everything laid out nicely is different from field shot.  Put a few thousand rounds down range and learn your capabilities and limitations of yourself and your gear.
