New cold weather cooking for me

It is that time of year up here where the Webber kettles are covered for the year. My cooking has moved inside for the time being. 
I was given a pressure cooker a few months back and I am really happy with it so far. I started with boiled potatoes and carrots, done in four minutes. I recently did a corned beef and it was done in an hour. It usually takes close to three hours in a pot on the stove. The biggest difference other than the time is the corned brisket still retained it's nice red color and was falling apart. When I do it in a regular pot it turns gray. It was the best corned beef I ever made.
I am looking forward to squirrel and  dumplings real soon.

Might have to get one of those. I'm sure not cooking outside right now (temps between -10/+10F all week) and always pressed for time, regardless of the weather!

I LOVE corned beef! 

Mother used to use a pressure cooker to make corned beef, but switched to a crock pot when I was in high school. I was also a little leery of pressure cookers.....I always thinking it was gonna "esplode"...Bucky 
It's rare to hear of anyone these days using a pressure cooker, Doug. Mother also made some chicken dumplings in the cooker that were to die for.

Yep, can't wait to do dumplings. Set the dough in the basket and put it in in the pressure cooker above the squirrel for 5 minutes.
