I know its somewhat mundane, but like a pitcher, I wanted a change up.
 
First I took some of the smoked sausage and cut it up in to fine pieces.
 
After chopping, I put it in a small pan to just warm up.
 
Then you just want to warm is up. Another thing that I wanted to add was some refried beans to make it authentic.
 
 
While this is warming I went ahead and arranged my tortilla chips, then taking a butter knife I applied the refried beans to the chips.
 
 
 
Now, one to my wife's favorite part...CHEESE!
 
 
 
 
After your prep is complete, turn your broiler on and put it in. I only leave them in for about 3 1/2 minutes. I want the cheese to melt and the chips to get extra crispy.
 
 
Once your cheese has melted, plate and then devour!
 
 
 
I used half a pound Axis Sausage.
Half a can of refried beans.
Two fresh jalepenos
1/4 of Monteray Jack shredded cheese.
 
The Salsa was made with several ingredients.
First I took a can of tomatoes(whole)
Two cans of Ro-Tel
One Lime
One Clove of Garlic
One white Onion
One Teaspoon of Salt
1 Jalepeno
I wish I had some cilatro, that could have taken the flavor up a notch.
 
Then I will through it in the blender. Let it pulse a couple of times.
 
Then add 1/4 teaspoon of Cummin, blend some more then pour and serve.

Mike I'm thinking of taking some of the hamburger meat and making a pizze tonight.

Dang Bud, I guess you and I are cut from the same cloth.
 
I did do a pizza the other day. Didn't turn out the way I wanted. Tried to do a fire baked pizza, but it wasn't good at all.
 
I decided to use pecan and the dough was so smokey you could eat it.

Next time you do nachos try using taco meat like you did with the sausage.  Also nice to chop up some fresh jalipenos tomatoes & onions and cilantro to top it after its cooked.
