Going to scope a Rem 700, 300 Win Mag. Will the Talley one-piece aluminum ring/mounts work or should I go with Steel?

Talley makes about the only aluminum mount I would put on a magnum.  You should be fine.

The design of the mounts is far more important than whether it is made of aluminum or steel. 

Talley lightweights have a lot going for them strength-wise:  wide contact area with scope, 4 screws per ring cap, lower ring saddles integral with the bases, and fairly thick cross-sections.  They are more than strong enough.  They are actually stronger than many steel designs.
