I've eaten cow tongue many times since I was a kid and I love it. My dear old Granddad used to get and make sandwiches out it. Messicans make it and put it on tacos.

Best to try it BEFORE you know what it is. Like I said, my Grandad used to like it on a sandwich with horseradish. He gave me some once when I was a kid and I just "assumed" it was roast beef. It tasted great and I liked it ever since. 

Conversely, he told me he was eating pig brains with eggs once and offered me some and I politely declined.
I couldn't do it....

Reminds me of a funny, true story related to beef tongue my dad told me:

My grandfather (father's father; his name was Ted, whom I was named after) owned a grocery store in my hometown. One day a local lady walked into the store, looked through the glass at the meat counter and the following conversation occurred:

Lady: "Ted, that's a nice looking roast right there!"
Grandfather Ted: "Oh, you mean that beef tongue?"
Lady: "TONGUE?!!!" "Oh Lord, I would NEVER put something in my mouth that came out of a nasty cow's mouth!!!"
..."I'll take a dozen eggs, please."

That lady had obviously never seen the inside of a hen house. Still, I have to ask: Do you scrape or peel the outside of the tongue before cooking and consuming it?

jonoMT, I take the skin off the tongue before I eat it. I normally cook, peel, shred or slice and eat. I suppose there are some people that don't take the skin off before eating but I am not one of them.

I've had smoked tongue before and it wasn't bad....
 
Very interesting to look at a deli sliced tongue.  It reminds me of a Kiwi fruit middle...
The taste buds look like the kiwi seeds.
