I have a matching k98 carbine, and I want to use a scope mounted on a rear sight mount, which would afford about 11in of eye relief. A scout scope seems ideal, but they are usually only 2X, so I waould like to use a 2-7x32 handgun scope instead. These are quoted with eye relief figures that bracket 11in. Has anybody here experience with such a setup?

Yes! Your idea can be executed in a very secure and clean manner, but you will probably need a fixed power scope.

Most of the variable power pistol scopes have wildly variable eye relief across their power range which makes them wholly unsuitable for scout mounting, or even for use on the hardest- kicking handguns, for that matter.
A notable exception is the Leupold 2.5-8x32 which lists constant 15" eye- relief.

Scout- style mounting will restrict your field of view and higher magnifications will suffer the most.

I mounted a Leupold 2x pistol scope in the rear sight mount of a Mauser back in the 70's
using a dovetail base that slip fit into the mount-  tapped holes into the sides of the base to accept screws through the flip-up sight pivot holes of the K98 mount.
That setup never changed zero in the years I owned and rough- housed it all over the place.

You don't have to get so elaborate...
There is a K98 scout base on the market that works on the same principle and incorporates a Picatinny rail. That rig will sit a little higher, which should give you more options for scope diameter.
