Does anyone have an opinion on the Leatherwood U3510x50 uni-dial scope? I have a Rem. SPS in .308 and am planning on 300-500 yd shooting.

The Leatherwood is an excellent choice for twisting scope rings, hammering nails, anchoring a boat, and other such task.  It is not good for use as a rifle scope.
