What is a good smoker?  I know nothing about them, but have been interesting in one for a while.

Friend has a Green Egg.  Nice.  Be prepared to part with cash.

Years ago, I worked in the steel fab department of Orbitron, and one of the contracts we had was for the Big Green Egg. We made the hinge mechanisms, stands, handles, etc. They were considered by most to be the best smoker/smoke cooker/ grill available.

 Expensive though.

A co-worker was thrilled and honored to be awarded one of the prototype models, ( a Major Award!),  and the first time he used it, someone was pulling a garden hose around a corner, hooked it and tipped it over, shattering the ceramic shell. Witnesses say he was almost crying!

Sorry I can't add anything about actually using one; never had the opportunity.

My wife's sister has one... it is a GREAT smoker.  Starts at $3k, I think...  Build one of stainless, it will work as well and cost much less.  A friend of mine drew up some plans and had the metal shop at the local high school do it as a project and he bought supplies for the class.  Everybody won and he has a trailered 8' long by 4' diameter stainless steel cylinder smoker that he only paid $800.00 for.

Well, for under $200.00 you can buy a plain ole jane side by side smoker/grill.  Its the original design by an old company called Oklahoma Joes.  Their original product weighed a ton and held heat wonderfully.  I believe Brinkman bought out their plans and the bbq sauce recipe.  The new ones are made from much thinner metals and do not hold the heat as well, making it harder to regulate in cold weather.

Anyway, thats what I use and it works just wonderfully.  The cooking section is horizonal, but you can find them in a vertical box as well.

I know several people that have the electric and propane versions and they like the ease of heat control in these models.  You can set them and leave, where you have to babysit the charcoal/wood ones.

I have also heard rave reviews about the Egg, I just can't part with that much money.

Here's a good place to do some research.

I'd stay away from the mass produced el cheapos you see out front of Home Depot.  I've heard good things about the Oklahomo Joes too but not sure if it was pre-buy out or not.

If you have a Bass Pro Shops, C abelas, or G ander Mountain around I would check them out, they usually have some heavy duty ones.

I have a thin walled Brinkman. It works fine as long as it's not cold out, like Scoot mentioned.
It has two racks, a liquid pan and then the coal pan in the bottom. I vary the liquids that I put in the drip pan depending on the meat being smoked. This aspect can allow a lot of variety in results with the same cuts of meat, also.

My uncle built his own.  Found a stainless tank in a some metal yard.  It was a defect and he got it for song.  Him and his pastor now do a lot of smoking for different community events.

Here a pic.

Bass Pro carries a model by Horizon Smokers. I bought one back in the spring. It is very close to the old Oklahoma Joe's . It is made out of 1/4" steel and holds heat extremely well, it has better stainless grills than an Okl.Joe, but it is a little smaller than the originals. I can cook at 200-250 for about 7-8 hours on one 15 lb bag of Kingsford.

I haven't seen much else out there for sale with the quality of the old Okl.Joe's.  Good luck !!
