"Eduardo is rummaging around his pantry making sure he's got enough chili peppers....Besides the ancho chili peppers and the arbol peppers and container of Hatch Chili Powder, he's found a can of green chilis and TWO cans of chipotle peppers in a hot sauce....he found some Mexene Chili Powder in a jar....a can of enchilada sauce....this stuff was in the pantry that's got his toaster in it. This stuff is separate from the spices on the other side of the kitchen. He's got plenty of Mrs Renfrow in the pantry and some open jars in the fridge...got Cayenne powder....various chili powders...." |

Eduardo, I've had some issues with ordering the hot sauce... my Macbook is over 13 years old... many sites no longer communicate with me (which is somewhat to my liking, though at times frustrating). I tried to order several times...sin suerte...so, I'm going to break down and order on my wife's computer.
I'll let you know when it is headed your way. I am of the opinion that computer companies, software companies should not be legally allowed to obsolete your computer hardware and software. There is a guy who lives not too far from me who has a '57 Chevy, nearly original, that still drives like new. This computer still works just fine, I just cannot update any hardware or software... |

Well, I made my chili today. It was cooking while I was driving the school bus.
I eliminated a couple of things. I did not use ancho peppers because I did not want that ancho pepper in my chili as an under taste. I blew off the bell peppers because I didn't want that bell pepper sweetness coming through. I wanted a more Standard Chili taste. Well it's REAL GOOD. Nose and eyes are watering..... Otherwise I added refried beans for thickness and poured in a tablespoon of apple cider vinegar and a can of stewed tomatoes. |

The chili was good but the arbol peppers dominated the taste. Next time I'll add MORE habanero salsa and a jar of jalapenos to add some variety. Gotta have more varied pepper flavors.

I use cayenne quite a bit because they give a subtle heat without overpowering the taste. Have had habaneros in many foods and never found them terribly hot. Could be where they’re grown though.

I love hot but I like to taste it too. The New Mexico hatch chili peppers are wonderful, I think they rate just under jalapenos, some of the best Mexican food I've ever ate was New Mexico Mexican. Many years ago there was a thread on this site about a hot pepper challenge with some of the staff, someone broke out the ghost peppers, hilarious.

You can always try Black Garlic.....Bravado Spice Co.......but I think it is one of those MANUFACTURED peppers to kill you.....

I'm gonna make chili soon...in a few days...as soon as I finish up my latest chicken breast masterpiece. I'm gonna go easier on the arbol peppers this next time and add an entire jar of jalapeños and an entire jar of Mrs Renfrow's Habanero salsa. Plus my Hatch Chili powder and maybe some Trappey's tabasco peppers, plus some coriander this time....no maple...or sugar... plus of course Paprika and Cayenne pepper.. I'm going to use 1.4# of seared stew meat plus hamburger...and refried beans and some baked beans...probably some cheese, too. |
