Im planning on buying a 15" 7mm-08 barrel for my encore and was wondering what I should be considering for the scope.  Any suggestions would be appreciated.

I had a Contender handgun with a 14" barrel chambered for 7 x 30 Waters.  I bought the Hunter Pkg that included TC's own scope, a 2.5 - 7 power.  Never had any issues with it.  Killed many a whistle pig and deer.

I use Burris 2x on my 15" Encore 7-08, got a nice doe at 95 yards this year..........

On Contender Pistols, I find that 2x works just fine and,which unlike higher magnification, keeps my shaking within manageable levels. It is enough for hunting, but my self imposed limit for handgunning game is 100-125 yards.  I have a Burris on a 35Rem, a Leoupold on a 44 Mag, and a Sightron on a 30-30Win. They all do fine. I have a variable Bushnell, which came on a barrel that I got at a gun show, on a 223 Rem and it is a cut below all three of the above scopes.

I have the 1x Burris on a 45-70 Encore pistol and it works great. With 1x you have unlimited eye relief so it is instantly clear and in focus.  I have had a 3-12 on a .308 15in barrel but did not like the scope because eye relief was very awkward over about 6x and it was bulky.  Any good manufacturer (Leupold, Nikon, Burris etc) 2x or a variable will work.  What you need depends on your style of hunting if you stalk game you want low power, if you still hunt and benchrest shoot you can take the time to use high power scopes.  A benchrest guy would probably have loved the 3-12.  A lot depends on what distance you will engage your target at.  I have shot deer with open sights on a 4in barrel .357 revolver at 75yds. I get consistent good hits on targets at 100 yds with the 1x . I sighted in the open sights on the .308 at 100 yds yesterday and was getting very close to the X ring off sandbags, but a scope is helpful.  Also worth considering would be an aimpoint or EOTech.  I've been knocking around the idea of putting my 1X aimpoint on the .308 barrel.

You need about 1/8 inch more clearance front to back than the standard 30mm rings to mount the aimpoint because the center portion of the body is so long. or for 1 inch tube optics

Burris makes a dual dovetail mount that works very well also, but the quick release system works well for the interchangeable barrels and it is nice to have a .223 or .308  that you can get cheap ammo for.
