Alright, listen up.
You want good cornbread... I'm spilling the beans. When the jug of milk in the frig gets low, set it deep in the back and buy a new jug. Let the old milk get good and spoiled,,, that's right, let it rot till it stinks. When you're ready to make some cornbread, take (1) cup of good ol' spoiled milk and mix in (1) tblsp of vinegar (any kind). Heat your oil in a black iron skillet. Enough to float the cake. You want it to bake in suspension. Mix 2 cups corn meal, 1/2 cup flour, 1 egg, and your spoiled milk w/vinegar. You want the mix to pour off the spoon evenly. If it doesn't, add a little water till it's right. Bake at 400 degrees for about 30 min max, or until top starts to turn golden brown. Pull out, put a dinner plate face down in skillet and flip over (don't burn yourself). If your skillet is seasoned well the cake will fall onto plate without popping it on the table. You can also add cracklings, jalapenos, corn, any additives you like. ENJOY! |

I love Cornbread, and my granny from Ky, made the Best ever, and she made it in a Black Iron pan. man I miss my granny and her cornbread, and I am hear to tell you them Southern Ladies can Cook.....

I use buttermilk an don't use the flour. And a big ol' spoon of crisco! Toss the pan in the oven till the grease is smokin'. I gotta stop I'm getting hungry!

I despise buttermilk, however, my grandmothers cornbread was to die for, though I hope she didn't use buttermilk in it. |

I hate buttermilk... but it is good for making cornbread. My grandmother used it, made the best cornbread I've ever tasted.

Perhaps it was a generation or two of similar cooking skills. I've not tasted anything like my grandmother's cornbread since she died.
She also made a chocolate cake that I have searched for something similar for years... can't find anything close.

They had to learn how to cook back then there were no fast food places. My grandfather would cook cornbread in a skillet and toss the cornbread in the air and catch it with the skillet. I still do it the same way. Cornmeal buttermilk a pinch of baking soda an egg and occasionally bacon pieces but what I really like to put into it is sharp chedar cheese chunks after I pour the batter in the skillet. I also prefer to add real butter around the edges of it to cook in rather than cooking oil.

My grandmother kept bacon grease in a coffee can in the freezer. Sho put bacon grease in almost everything she cooked.
