Here is a good marinade for beef, chicken or anything wild you want to throw in it.
½ cup of veg oil ¼ cup soy sauce ¼ cup red wine vinegar 2 tsp worcestireshire sauce ½ tsp ground ginger (optional) 1 tsp minced garlic marinade 24 hours |

Love that one. When we were up hunting ptarmigan in Alaska last year, we were staying with Phil and Rocky Shoemaker. Phil makes his own beer, and had two different brews ready for us. Well, that first morning, we went out for the opening of Ptarmigan, shot a handful of them and as I was dressing them in the beer shed, I thought aha! I mixed up a simple dijon mustard and beer marinade. Excellent. (I think it was a mild bitter ale.)

Ditto Scooter. It was tough keeping away from the beer shed. I think if Phil Shoemaker ever gives up grizz guiding he could be a heck of a brewmaster.
Ever try Uncle Mike's Hard Lemonade as a mop for water smoking small wild piggies? I took a little pig in Texas--on purpose--one so small it was still hanging out with mom. We split it down the spine, then cooked one half on the water smoker. I added a bit of prepared soy/ginger/garlic marade to it, and mopped it good ever 30 minutes or so. (Didn't last long at the table either. Looked a little like a utensil-less Christmas dinner: greasy hands, groaning stomachs.)

PS And before you ask, yes, the whole six-pack was gone by the time the pig was done. Two for porky, four for the cook.
