This year for Christmas a close friend explained they had nothing to do or go for Christmas. Lovie being the person she is, invited them over to spend it with us and that I would make dinner, which I was very happy to do.
 
This year, I decided to prepare red snapper. However with its bland texture and lack for a real distinct flavor, I put a little Brazilian twist on it.
 
For starters, I made a fresh Brochette with Black & Green pitted olives and small hipster style tomato with parmesan and asiago cheese.  Those didn't last very long, however gave me a little time to finish cooking the fish in the oven.
 
 
With the fish, I had filleted the exterior off and then sprinkled with Sea Salt, Cracked Black Pepper and a conservative amount of Cayenne Pepper. While I let that rest, I chopped up half a White Onion then let it stand on the stove with medium heat.  Once they became translucent, I incorporated minced garlic, cappers and some capper broth...still on medium heat.
 
Meanwhile I was rough cutting some cherry tomatoes, Green Olives, and Jalapenos. Once complete, I added those to my pan and let them cook-in while stirring occasionally before they were about to break down.
 
Then I created a bed of vegetable in a baking pan placed the fish in the pan and then covered with veggies and placed in a hot oven (425 degrees) for about 15 minutes. You don't want to leave it in there too long, because it will over cook. It needs to be flaky.
I plated and served this with a Roasted Rosemary Red Potatoes.
Colorful huh?
 
For dessert, I made a light but sweet Shortcake with Strawberries and Cream.
 
Lovie's friend, explained after dinner she has never liked fish, because of the rubbery texture and taste, which I almost felt bad about making but her plate was clean and asked if there was more once she was done.
 
This is one of my favorite things to make, because it is vibrant, flavorful and fun to eat. Like a fish nachos almost.
 
One of these days if Mike650 will make it down, he and I need to have a cook-off. I'd like to compete against his Mediterranean/Italian cuisine.

So Skylar, would you like to visit upstate New York this summer?

We do have a period without snow..

Actually our summers are quite pleasant, no humidity usually a nice if not brisk wind off the lake. Very rarely anything approaching 90*.

Mike one of my dear friends does chuck wagon competitions here in Texas and sometimes in Kansas even. He's been a State trooper around here for a while, but has retired completely now. That is a very labor intensive way of cooking, however I would try it once. My finesse comes from the comfortable nature of my home and watching my son discover new things that he normally wouldn't even try, but because it looks cool, he's more apt to trying it.

That's why I created an app first with bread. The brochette provided some filler before the entrée.  However, believe it or not, these portions were pretty large.
 
Normally I serve small portions, because Lovie wants to lose weight. Would not hurt if I would lose some weight as well. Wink
