20x42 mounted to AR15 Flat Top Picatinny with Burris Xtreme tactical
30mm rings 1" high. Shoots approximately 2 feet right of aim
point (outside of scope windage adjustment). A why would a newly
mounted scope be so far off and how can one adjust for it?

Take scope off. Find mechanical center for scope. Reinstall.

It's not the scope, it it's the mount/ring system.

I will give the Mechanical Zero recommendation a try, I see it worked
for at least one other person on the forum. If that does not
work, I see someone else recommended a ring/mounting system that
has a windage adjustment which then requires minimal adjustments on the
scope.
