150-160gr depending on bullet construction.  The 175gr bullet use to be the bullet of choice, but with the advent of bonded bullets, there's no reason to go beyond 160gr.

All else being equal, I would go with 160's, but it depends on the bullet style/ construction.  For example, if you're shooting a solid copper design, a 140 may be as long as a lead core 160.  In that regard, a lot depends on what your rifle shoots well.  Pick a more controlled expansion, tougher bullet that will hold together a bit better than a thin jacketed deer bullet to drive through thicker bones and muscle to an elk's vitals, especially if you're using 140's.  The heavier the bullet mass and higher the sectional density (SD), the less need for a so-called "premium" bullet.  A 160 is long for caliber in 7mm and will often have higher BC (if it's a low drag design).

I use 160 and 175 gr for my 7mmSTW and my 7mmRemMag for moderate to long range hunting conditions.  Still very flat shooting, extremely deadly...
I like the 175's best.

Nowadays, there are far fewer choices in 175's compared to 160's.  That coupled with the fact that there are plenty of heavily constructed 160 - 168 gr. 7's, many with a BC advantage over the typical 175 offerings, I believe there's no advantage to a 175 anymore. Not to say that there's anything wrong with 175, just that 160 - 168 currently trumps em.

I have killed elk with both 160s and 175s.  Both will really tear a hole in one.

I use 160's with my 7mm for deer and I've seen what they can do more than a few times. I would not hesitate to use 'em for elk (someday).

its worthwhile to shoot the 175gr in the stw, not so much in the 7mag though. the 160gr accubond in the 7mag is awesome.

What part?

There are far more 160's available than 175's.  That is fact, not perception.  Most of the common 175's are flat base bullets.  In 160's - 168's, you have a choice of every conceivable hunting and long range precision bullet ever dreamed.  Not so with 175's.  That too is fact.

That 175's will kill very well is not in dispute, just that it won't do anything that a 160 won't also do, while offering higher BC options in the process.
