Becides the gloss finish on the stock, what is the difference between the X-Bolt Hunter and the X-Bolt Medallion? I just like the look of wood stocks, but my hunting rifle doesn't need to have a pretty gloss finish for more $

Upgraded wood used in the grip end cap and also the for-end tip. Gloss finish on the metal work as opposed to matte. Likely to have better grain in the stock as a whole, but not always the case.  Scroll work on the receiver not found on the hunter model. No, it won't shoot any better.

Medallion - think Bling -- glossy ..
Hunter model is matte with a subdued finish to the  stock ..

What the others have said is the only difference I can see.  I have a Hunter model in 270 and have found it to be very accurate and a pleasure to shoot and carry.

I have not shot an A-Bolt in a few years but they did not quite feel right to me, hence the reason I never bought one.  When the X-Bolt came out I was in the market for a 270 and decided to try the X-Bolt.
I can tell you this:  the X-Bolt feels better in my hands, has a better trigger, and I like the detachable magazine better than the A-Bolt's setup.  I'm comparing it to an A-Bolt from 99 or 2000 so they may have made changes.

One of the options available on the Medallion is iron sights. I considered it just for that reason but my eyesight ain't what it used to be and figured I always be using optics so saved the money and went with the Hunter. That was a little over a year ago, not sure if it's still an option or not.

I'll take an X-Bolt over an A-Bolt and twice on Sunday! The recoil pads on the X-Bolt are super as is the deep cut checkering.

The medallion x-bolt also has a much more elaborate checkering pattern with diamond patterns under the forearm.  I own both medallion and hunter model x-bolts.  I prefer the medallion but would hunt the hunter more cause I don't have to worry about hurting it.
