Does the IOR hunting 2.5-10x42 come without an illuminated reticle?

Yes.

be advised, it is quite brightly lit, I highly recommend the newer 2.5-=10 tactical (I have one), much better illumination system, FFP, exposed turrets, a great little scope.  I have it on a hunting rifle and it works fantastic.

Only the center dot is illuminated, and never overpoweringly so.

I checked and it appears that only the Tactical model can be had in that power range nonilluminated. This from IOR website.

The IOR hunting model does just have an illuminated dot.  The whole reticle is not illuminated.

Older models illuminated the entire reticle, 2010 models illuminate just the center dot: didn't mean to confuse just wanted to make you aware.

Those that illuminate the entire reticle are too bright for low light use.
