Tuna steak and just enough light olive oil so that it does not stick to the pan. Pork rub optional.

I am a big fan of brook or rainbow trout. Put them in a pan with a bit of olive oil and a wee bit of pepper.

Pan-fried wild brook trout for the win here. Fried in butter, salt and pepper.
Never cared for soft catfish types.
Deep fried, battered bluegills or crappies are pretty good.
I also like boiled cod, (Poor-mans Lobster, dipped in seasoned melted butter.)

I like to get any trout, fillet it. Make a mixture of flour, salt, pepper, and a little bit of garlic powder. roll the fillet in the mixture. Coat the pan in olive oil or bacon grease (if you got it) and let the fillet fry till brown. I'm not a big fish eater but I'll eat this.
Edited to add: I like this recipe because it is fast and easy. The texture is good because you have the crispy outside with nice tender inside. Edited by Monster - May/06/2009 at 12:14 |

Fresh Crappie, fileted and deep fried using Louisiana Fish Fry seasoned corn meal. IT just doesn't get any better. Second best is bass filets done the same way.
I've had trout prepared about every way possible, I guess, and didn't care for any of them.

I'm not in to breaded fish, my favorite is some blue gills or crappies pan fried for breakfast. Nothing like fish and eggs.

Right on. Camping is the best when you can catch fresh fish for breakfast. I take the crappie, blue gill or walleye fried in a little butter. Dynamite!! |

Red Snaper or Grouper. Fileted and broiled 15-20 minutes with butter and lemon juice, S&P to taste. Light and fluffy white, yummy!!!! Walleye or stripper (rock fish) is 2nd choice.
Being Southern... Basically any white meat fish, lightly floured and pan fried with buttery grits and corn bread with ground red peppers.
Man I'm drooling and I just eat 10 minutes ago! LOL

Fresh-caught walleye pike or rainbow trout. Both are delicious when cooked any reasonable way. I'm surprised nobody has previously mentioned walleye..they make a great shore lunch in Canada. All you need is some butter and a frying pan. Take a lemon, if you want to get fancy.
