What adjustable cheek pieces do members of this forum use or recommend for a stock 700 VS?

Were you looking at the type that have adhesive and can be moved back and forth, or are you talking about getting a new stock with adjustable cheek pieces built in?

One that can attach to the standard VS stock, it doesn't have to be removeable, but adjustable would be nice..  I know you can buy a new stock like the  A-5 from McMillan, or one of the pro-series from HS Precision. But other that a complete new stock, what would you recommend?

Still confused- do you mean continually adjustable or adjustable just the one type before the glue sets up?

I would be comfortable with just being able to adjust it before mounting it permanently.

Most adjustables require cutting the top part of the stock, installing the pins, and the tension screws, then refitting. Get a brownells catalog or go to their web site for more information.
