![]() I have this one. It does a really good job, but there are things I don't like about it. "Knock on wood" I haven't cut myself on it yet, so be careful. A little time consuming to set up. I still need more stones, straps, and paste to get the edge I'm looking for. The best knife sharpener I've seen is a friend of mine. He uses ceramic stones and oil. Does by free hand. I've seen him split hair with knives he's sharpened.

He probably could sharpen it to where you could shave the hair off of your arm. It probably wouldn't stay that sharp for very long because of the steel used in the blades.
The question is would he sharpen it.

I've never been able to free hand sharpen a knife and keep a consistent edge on it.

I have never been able to get a decent edge on that Cattaraugus knife because of the convex shape. But I finally bought a strop and I got it to where it is Pretty Dang Sharp....but not Razor Sharp. can stick the blade into a sheet of newspaper and THEN slice through it like silk, but I can't get the knife to slice thru it starting on the edge of the paper....
I just ordered a Lansky system and the separate little stand....I'll see if I can't work on the edge with the fine stones... ...in the meantime I will be able to sharpen all my flat ground blades and kitchen knives...

A stone like Doug's pic or DMT's are very nice and what I use. I've tried the Lansky system, many swear by it, me not so much.

I've used a number of sharpening systems I use a Lansky mostly but Tormek paste "Honing Compound PA70" on a piece of leather is what I use for my wood carving flexcut knives they get pretty sharp. Best to glue a piece of leather to a block of wood to control it.
