My BIL/SIL have never eaten Axis.  We have a "haunch" on the "barby" right now… will smoke for about 6 or 7 more hours.  It's looking pretty good so far.

Only smoked another 4.5 hours… then put in the oven on 150 for overnight.

the Axis was delightful and everyone (even uninitiated game eaters) loved it.  Tender, moist, flavor to die for (smoked with cherry and Jack Daniels flavored wood)… served with tomato and cheese salad with and hint of mint and with basil, butter and olive oil flavored rice and a hearty red zinfandel. Just amazing.

By far the best meat, I've ever had. That's including Elk and Bison.

Cooked some Axis backstrap steaks today… simple, pan-fried in butter, grapeseed oil, and onions, then covered with a Madeira sauce, with yellow squash, green beans and peach cobbler.  

It was right pleasing...

My new 5.0 Cubic Ft freezer is almost completely full with meat from the Axis… I have about 0.5 CuFt left.. nothing but Axis.  That was a BIG boy...
