Just got CAR-A3 HBAR Elite .223 with 24" stainless barrel given to me.  Will be used for coyotes, prairrie dogs and target 500 yards.  I have $1000 to spend.  Would like opinions on these scopes and rings or mount that would work best.

I have the same rifle and I run the SWFA SS 5-20 FFP HD ...
 
 
Its a little above your $1000 budget ... but P dogs are 500 don't stand a chance.  The 3-9 is also a great scope but a P Dog at 500 with 9x would be rough.  One inch groups at 200 are the norm with this setup.

I've used a Trijicon 2.5-10 with red triangle.  It was a great scope, but bigger and heavier than the 3-9 Accupoint (green dot) I've replaced it with and didn't do anything better than the smaller one.  If you want something in that power range, you might look at the 3-9 instead.  If you like the 2.5-10 better, I'd consider the green dot instead of a triangle;  the tip of the triangle isn't as precise as it looks like it might be.

 
I have the 5-20x50 on a P-308 and have been happy with it so far.  I have the amber mildot, which has been good at night, but I might go with a green dot if I get another one.  The amber is much more subdued than the green.  A review on long range hunting loved the glass but didn't think the reticle was useful for things like varmint hunting.  YMMV, but you might consider other scopes with different reticles if you don't like dialing knobs.
 
I've never owned a Swarovski.  If you go with that one, please post your impressions.
 
My 5-20 is on a Nightforce Unimount, and I like it fine.   It's got 20 MOA built in, which I don't need at this point in my shooting development, but the Accupoint doesn't have a ton of adjustment available.  You shouldn't need the 20 MOA for your stated purposes, but if you think you may put it on another gun for longer distances it might come in handy.  I normally go with QD mounts, and I like Bobro the best so far.  I've got Larue also, and I've had no trouble with them.  The Bobro mounts are easier to get on and off, self-adjust to different rails, and are just as repeatable as the Larues in my experience.

I was looking at Trijicon and because of the adjustment (lack of), I've been looking at Leupold's VX-R models and a lot of folks seem to be happy with them thus far.
