Does this mean if you set the a.o or s.f to infinity it will be clear.Or do haf to adjust for each yardage.Say a deer is at 300yds and the a.o set at 75yds it would not be clear right????????

correct, at least with my experiences with ao's its been that way same was true for me if i put the ao at a yardage further than the target was actually away from me as well.

But infinity is clear.Say on a deer 50yds to 600yds an it will be clear???

the infinity on the scopes i used if the target was to close and i was on infinity it got blury, i wonder if the scopes fixed 12x had something to do with.

When set on infinity the further targets would be the most clear, that is beyond 300 yds and further. Close up will be blurry. The closer the more blurry it will become. It has to do with your angle of incoming light. The further a target is away the less of an angle the left and righ and top and bottom of the picture has to make in order to form a picture.
Stand close to a picture (1 yd) or far away (10yds) and see how your vision angle changes.
Obviously different optical lenses has different infinity readings, but in riflescopes it will normally be beyond 300yds. Cameras are much shorter.
What you are dealing with is focal length and depth of field (or how far into your picture will everything be in focus).
